Griddle lines help to achieve that restaurant-quality sear, as well as allowing juices and fats to escape, while the pouring lip to one corner makes it easy to drain any excess off. To get the best out of this pan, before your first use you'll need to wash away the protective wax layer with warm, soapy water, dry thoroughly on a warm hob ring then build up a non-stick finish by coating with a little oil. Once seasoned, food and debris will be released effortlessly, so you can spend less time on the washing up and more time on your culinary creations.
